🔸Yuzamashi - water cooler- Abkühlgefäß / Tokoname ware


Japanese water cooling pitchers, called "Yuzamashi  (湯 冷 ま し) " are used to lower the temperature of freshly-heated water before using the water to steep tea leaves. If the water temperature is too high, the taste of the Japanese green tea will easily lose their taste, so it is highly recommended to use "yuzamashi" to enjoy high-quality tea. [ TIP: If you pour boiling water directly onto the Gyokuro-tea leaves without cooling, your tea will become bitter and lose its smooth, rich aromatic taste! ]

 

Since the preparation of green teas usually requires lower water temperatures than the preparation of Oolong tea (75 ℃ -  95 ℃), black tea (90 ℃ - 100 ℃) or Pu Erh Tea (90 ℃ - 100 ℃), freshly boiled water must be cooled down to the required temperature before pouring over the tea leaves. This can be easily made with "Yuzamashi". Most "Yuzamashi" have a flat and wide shape that more effectively cools water to the optimum temperature for green tea.

 

"Yuzamashi (湯 冷 ま し)" ist ein Gefäß zum Abkühlen von Wasser um die optimale Temperatur zu erreichen.

Für den Genuss von hochwertigen japanischen Grüntees ist die Verwendung eines Yuzamashi empfehlenswert, da japanische Grüntees leicht durch eine zu hohe Wassertemperatur dabei stark an Geschmack verlieren. [ TIPP: Wenn Sie das kochende Wasser ohne Abkühlen direkt auf die Gyokuro-Blätter gießen, wird Ihr Tee bitter und verliert seinen sanften, hocharomatischen Geschmack! ]

 

Da die Zubereitung grüner Tees in der Regel niedrigere Wassertemperaturen erfordert als die Zubereitung von Oolong-Tee (75 °C - 95 ℃), schwarzem Tee (90 °C - 100 °C) oder Pu Erh Tee (90 ℃ - 100 °C), ist es notwendig, das frisch aufgekochte Wasser vor dem Übergießen der Teeblätter zunächst auf die jeweils erforderliche Temperatur herunterkühlen zu lassen. Dies kann in einem gesonderten Abkühlgefäß ”yuzamashi” einfach erfolgen. Mit ihren meist flachen und breiten Designs kühlen sie das Wasser effektiver auf die perfekte Temperatur für Grüntee herunter.

🔸常滑焼 TOKONAME-YAKI -  A tradition of quality

Tokoname (常滑) is located near Chubu International Airport in southern Nagoya, Aichi Prefcture. High quality earthenware has been produced here since the 12th century, and still now, Tokoname is a center of pottery production in Japan.

 

Tokoname is one of Japan's six most important ancient kiln towns - the others are Bizen (備前), Echizen (越前), Seto (瀬戸), Shigaraki (信楽) and Tanba (丹波) - had the largest output of ceramics of any kiln town in the Edo Period (1600-1868). 

 

In particular, Tokoname used to be the main production site for ceramic water pipes. In modern times, it is known around the world for its ornaments such as tea sets and beckoning cats.
